What is Pyure Organic Stevia and Why Bake with it?
Pyure Organic is a natural stevia sweetener brand. Their process is pretty simple, actually. They harvest and dry only the highest quality of stevia leaves and extract it just like you would when you steep tea. What becomes of it is a fine white powder with more sweetness than your ordinary table sugar.
I like using stevia in my recipes because it helps me focus on getting better nutrition. Regular table sugar gives us negative consequences when we’re older: from diabetes to obesity.
And, eating sugar means our white blood cells can’t effectively fight infections. In the age of COVID and other illnesses going around, we can’t chance anything!
Thankfully, a natural sugar alternative helps our bodies function properly, so we can fight off the bad stuff and still treat ourselves. It makes these air fryer chocolate molten lava cakes seem less like a dessert and more like a getaway without the sugar.

How to Make this Chocolate Lava Cake Recipe
The following recipe has been provided by Pyure Organic — I’ve changed it into an air fryer recipe just for you! Note that some air fryers preheat while some do not. Check your manufacturer’s instructions for more. Not all air fryers are the same, so you may also need more heat and/or more time.
You can also make the cake batter in ramekins ahead of time and store, covered, in the refrigerator. Just make sure you bring them to room temperature before baking.
To make this sugar-free chocolate molten lava air fryer cake recipe, you’re first going to need to preheat your air fryer to 370 degrees Fahrenhiet.
Next, lightly butter or spray four 4-ounce oven-proof ramekins and set aside. Prepare a heat-proof bowl over simmering water as a double boiler. Once the water is simmering, add the chocolate and butter and melt, stirring.
With an electric mixer on medium-high, whisk eggs, egg yolks, flour, and Pyure Organic All-Purpose Stevia blend in the bowl. Add a pinch of salt and continue to whisk until the mixture is pale and thickened.
Once thickened, lower the mixer speed to low and gradually add the chocolate until combined. Then, add the chocolate mixture to the prepared ramekins by spooning the mixture in evenly.
Bake the lava cakes in the air fryer for 8 to 10 minutes or until the cakes are puffed and have a light crust around the edges. Using a kitchen towel or silicone oven mitts, check on and carefully remove the ramekins. You want the cakes to jiggle, soft in the center so the “lava” flows. If needed increase the time.
To serve the air fryer chocolate molten lava cakes, take a knife and run it over the edge of the ramekin cakes. Turn over the cakes onto the serving plate and add a dollop of whipped cream to each one. Serve with fruit and enjoy this decadent air fryer dessert!
How to Make Sugar-Free Whipped Cream
While the cakes are cooling, you can prepare homemade whipped cream in a bowl by beating the whipping cream in a bowl until soft peaks form.
Then, add in a teaspoon of Pyure Organic All-Purpose Stevia Blend. Whip for one more minute.
