Instant Pot Meatloaf and Mashed Potatoes
Meatloaf is an American favorite – and something that reminds all of us of home. My mom used to make Monday Meatloaf growing up, so now I’ve adapted my own version of the classic dish that is full of flavor and holds together really well.
I find meatloaf as a really good way to get your veggies, too. My Instant Pot meatloaf version combines celery, onion, and carrot, which gives the meatloaf its own good amount of moistness.
And the sauce on the top is tomatoey and sweet, just like a classic meatloaf.
I’ve also added in a way to make Instant Pot mashed potatoes simultaneously, so you can make Instant Pot meatloaf and mashed potatoes all at once.
I call this Lazy Instant Pot Meatloaf and Mashed Potatoes because it’s pretty quick to get everything going for your Monday night (or whatever night) meal.

How To Make Meatloaf in the Instant Pot
First, set your Instant Pot to sauté mode. Then, you’re going to throw your diced onion and celery in the Instant Pot with a couple of tablespoons of butter and a pinch of salt and pepper.
Once your onions and celery are soft, take them out and set aside.
In a bowl, you’ll combine all your meatloaf ingredients; the meat, the eggs, sauces, seasonings, shredded carrots, and breadcrumbs. Add in your celery and onion mixture.
Make sure you also add-in that ketchup so everything forms together. Mix it all together, without overmixing. Just until it forms into a pretty loaf is good.
Instant Pot Meatloaf Springform Pan
If you have a 7.5-inch diameter springform pan, you can spray it with some cooking spray and shape your meat into a loaf on the pan.
You can also use foil to set your meatloaf on top of it and make a little pan out of the foil by bending the sides up.

If you’re not doing the Instant Pot mashed potatoes, then skip this step and just add a cup and a half of water to the bottom of the pot and set your trivet/rack on top so your pan with the meatloaf can sit on top.
Instant Pot Meatloaf and Potatoes Recipe
So, add your cut and peeled potatoes with some salt to the Instant Pot. Make sure there are about a cup and a half to two cups of water covering the potatoes.
Place your trivet/rack on top, then your pan with the meatloaf on top.
Instant Pot Meatloaf Cook Time
Add ketchup on top of your meatloaf, spreading evenly with a spoon or spatula, reserving a little bit for after the meatloaf cooks.
Place your lid on your Instant Pot, making sure your release valve is set to sealing position. Press the pressure cook/manual button on high and set the timer for 25 minutes.
Once the timer goes off/beeps, you’ll let it sit for about ten minutes and then do a natural release.
Carefully lift your meatloaf pan out of the Instant Pot. You can use the trivet handles to do this as well. Set aside.
If you have the potatoes in there, then drain your potatoes and bring the potatoes back to the Instant Pot having it set to “warm.”
Add in your milk, butter, salt, and sour cream (or follow these instructions). And mash your potatoes.
Add the remaining sauce to your cooked meatloaf and serve with mashed potatoes.

Lazy Instant Pot Meatloaf and Mashed Potatoes
Ingredients
- Meatloaf
- 2 tbsp of butter
- ½ cup of diced yellow onion
- ½ cup of diced celery
- ½ cup of shredded carrot
- 2 pounds of ground beef or combination or ground beef and pork
- 2 large eggs
- ¼ cup of ketchup
- 2 tablespoons of Worcestershire sauce
- 1 tsp of kosher salt
- ½ tsp of black pepper
- ½ cup of breadcrumbs
- Sauce
- 1 8 oz can of plain tomato sauce
- 1/2 cup ketchup
- 4 Tablespoons light brown sugar
- Potatoes (Optional)
- 3 pounds of peeled Yukon Gold Potatoes or (washed) Russet potatoes, quartered
- 1 and a half cup of water
- 1/4 teaspoon of kosher salt
- 1/4 cup of milk
- 1/4 cup of sour cream
- 3 tbsp of butter
Instructions
- First, set your Instant Pot to sauté mode. Then add diced half cup of onion and half cup of diced celery in the Instant Pot with about two of tablespoons of butter and a pinch of salt and pepper.
- Once onions and celery are soft, take them out and set aside.
- In a bowl, combine all your meatloaf ingredients; ground meat, two eggs,¼ cup of ketchup,
- 2 tablespoons of Worcestershire sauce, ½ tsp black pepper, 1 tsp of salt, shredded carrots, and breadcrumbs. Add in your celery and onion mixture.
- Mix it all together, without overmixing. Just until it forms loaf.
- Using a 6.5-inch diameter springform pan, you can spray it with some cooking spray and shape your meat into a loaf on the pan. Optional: use foil to set your meatloaf on top of it and make a little pan out of the foil by bending the sides up so grease does not escape.
- Mix together your sauce ingredients; your tomato 8 oz can of tomato sauce, ½ cup of ketchup, and 4 tablespoons of brown sugar.
- Optional potatoes step: cut and peeled potatoes with some salt to the Instant Pot. Make sure there are about a cup and a half to two cups of water covering the potatoes.
- Place your trivet/rack on top, then your pan with the meatloaf on top.
- Add ketchup on top of your meatloaf, spreading evenly with a spoon or spatula, reserving a little bit for after the meatloaf cooks.
- Place lid on your pressure cooker, making sure the release valve is set to sealing position.
- Press the pressure cook/manual button on high and set the timer for 25 minutes. Once the timer goes off/beeps, let it sit for about ten minutes and then do a natural release and take the lid off.
- Carefully lift the meatloaf pan out of the Instant Pot. You can use the trivet handles to do this as well. Set aside.
- Optional: drain potatoes and bring the potatoes back to the Instant Pot having it set to “warm.” Add in your milk, butter, salt, and sour cream (or follow these instructions). And mash potatoes.
