Instant Pot Cilantro Lime Rice

If you’re not using the Instant Pot to make rice by this point, you need to start today. This Instant Pot cilantro lime rice is no exception. 

I’ve seen horror stories about making rice in the Instant Pot, but I don’t understand why? Before I started making rice in the Instant Pot, I was not the greatest rice cooker. I even had a rice maker, but it always took an hour to make.

Making Chipotle’s cilantro lime rice in the Instant Pot is ridiculously easy, and doesn’t take long at all. In fact, my way of making Chipotle’s lime rice is much better than the actual restaurant’s version at this point. It’s limey and I love the fresh taste of the cilantro that comes out of the perfectly cooked rice.

So, I’ve started making my own burrito bowls at home. 

After making this Instant Pot cilantro lime rice, you will feel the same way.

How To Make Instant Pot Cilantro Lime Rice

Before you get ready to throw everything in the Instant Pot, remember to first rinse your rice. I usually go with basmati rice because I love super-long grain rice, but for this recipe, I stuck with my normal long-grain white rice. 

So, rinse your rice in a mesh strainer. If you don’t like rinsing your rice, then skip this step. However, I hate that rice sometimes has a weird taste if you don’t. It’s your discretion. 

Turn on your Instant Pot sauté function to “more” and add in a couple of tablespoons of olive oil or canola oil. For this recipe, I chose olive oil because I like the fruity taste that comes from the oil. You could also try with grapeseed oil. 

Add in your strained rice, add about a half a teaspoon of salt over your rice, and toast your rice. You’ll want to move it around a little bit with a wooden spoon to get everything all toasty. 

Once it’s all toasted, you’ll turn off your Instant Pot then add an equal amount of water to the rice. I add about half the lime juice here and give a small mix before putting the Instant Pot lid on. 

Set the valve to sealing and hit the “rice” button. This will pressure cook the rice for 12 minutes. And when your Instant Pot timer goes off, add about 15 minutes to natural release.

Once you do your natural release, safely take off your Instant Pot lid. Add in the second half of the lime juice, and fluff up your rice with a fork. Add in your chopped cilantro. Then, add more salt to taste (if needed) and mix. 

There you have it – your Chipotle cilantro lime rice in the Instant Pot. Serve with some tacos or in a burrito or burrito bowl. 

How to Get the Perfect Rice Instant Pot Cilantro Lime Rice

  • Pressure cooker rice doesn’t have to be difficult. Choosing the right rice for your Instant Pot is key. Rinsing your rice well is the next most important step.
  • The first time I made rice in my Instant Pot, I used basmati rice and I failed to rinse my rice. 
  • I also failed to toast my rice up before cooking.
  • Toasting is important because you can bring out the natural flavors of the rice this way. When you add spices and seasonings, it elevates your rice’s taste. So, if you can, try not to skip these important steps.
