Instant Pot Brisket – A Quick Weeknight Dinner

Brisket is one of my favorite meals, and the Instant Pot brisket is no exception. I never made brisket before I tried it in my Instant Pot – could you believe it?

After years of enjoying brisket at BBQ restaurants and other places, I thought this would be the best one to try as a first-timer.  So, if it’s your first time, try out this Instant Pot brisket

Instant Pot Texas Brisket

So, what is beef brisket? Well, at first glance it is a tough cut of red meat. Cook it right (ahem, in the Instant Pot) and what you get is a tender, juicy, piece of meat that is packed with flavor.

Though, when you go out for Texas-style brisket, you will normally get a dry-rubbed smoked brisket over wood or charcoal. Either way, you get rich meat in the end – and this one in the IP cannot be beaten!

Instant Pot Frozen Brisket

While I normally would shy away from cooking frozen meat in the Instant Pot, it is still delicious is you cook Instant Pot frozen brisket. Simply put your meat in for a little longer if it is frozen. If you do not have a smoker or a grill, this Instant Pot brisket is a quick and easy way to get the best results.

This version of Instant Pot Beef Brisket has all the flavors you’d expect from a traditional Texas-style brisket. It’s popping with a variety of smoky, spicy, savory, and sweet BBQ sauce. You won’t go back once you make your own BBQ sauce.

Instant Pot Quick Beef Brisket Directions

Rub: In a separate mixing bowl, combine dry ingredients and rub all over the brisket. Marinate over 2 hours to overnight so the rub can penetrate the meat efficiently.

Cooking Instructions:

Combine onion, garlic, honey, maple syrup, apple cider vinegar, liquid smoke, and chicken stock (or water) to the Instant Pot inner pot. Add in the brisket and pressure cook on high for an hour and 15 minutes.

Once the timer goes off, do a natural release for 15 minutes. Once the 15 minutes is up, move the valve from sealing to venting and remove the lid.

Homemade BBQ sauce: Once cooked, rest the brisket on a chopping board. Press Cancel on the Instant Pot, then press the Sauté button to bring the leftover sauce to a simmer.

Once simmering, add in 1 cup of ketchup, 1 tbs of brown sugar, and 2 tbs of dijon mustard. Simmer for around 10 minutes to let thicken. Give more time or less to make sure it thickens, stirring occasionally. Add seasoning as desired.

Your Instant Pot beef brisket is ready to be served once you brush the sauce on every side of the brisket. For caramelized results, broil or air fry your brisket for a few minutes.

For Texas-style brisket, serve with bread to sop up the BBQ sauce and juices. Who needs a smoker with this Instant Pot quick brisket? Enjoy!
